Spring emergence food... Mung Beans!
Feeling sluggish, stuck, or irritable? It’s natural! Winter slows us down, while Spring—Liver season—pushes us toward growth, even when the light feels distant. And let’s be real—it’s hard to push toward a light we can’t yet feel, hard to be new, emergent, and trust that the world will nourish our growth.
Mung beans help clear dampness, especially in the Liver. I found a great mung bean congee recipe (below)—a simple, cooling dish you can enjoy as an appetizer, side, or meal (just add protein & veggies). It lasts about four days in the fridge, so give it a try and feel the calming effects!
If you run warm, add an extra ½ cup of mung beans for extra cooling. 🌱
