Spring emergence food... Mung Beans!

Feeling sluggish, stuck, or irritable? It’s natural! Winter slows us down, while Spring—Liver season—pushes us toward growth, even when the light feels distant. And let’s be real—it’s hard to push toward a light we can’t yet feel, hard to be new, emergent, and trust that the world will nourish our growth.

Mung beans help clear dampness, especially in the Liver. I found a great mung bean congee recipe (below)—a simple, cooling dish you can enjoy as an appetizer, side, or meal (just add protein & veggies). It lasts about four days in the fridge, so give it a try and feel the calming effects!

If you run warm, add an extra ½ cup of mung beans for extra cooling. 🌱

Mung bean congee

Video instructions from Savory Sichuan (this video IS it's own medicine - 3min)

Big batch

1 cup mung beans, 2 cup jasmine rice, 16 cups water

Small batch

1/2 cup mung beans, 1 cup jasmine rice, 8 cups water

  1. wash mung beans, set aside
  2. double wash rice, set aside
  3. heat water in a pot to a boil
  4. add mung beans, cook on high heat for 50 min
  5. add rice, cook all on high heat for 50 min, then lower heat to medium and cook for an additional 20 min
